Ingredients:

  • 2 Best Damn Beef Bone-In Ribeye Steaks
  • 2 tbsp olive oil
  • 1 ½ tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp smoked paprika

For the Cowboy Butter:

  • 4 tbsp butter, melted
  • 1 tbsp fresh parsley, chopped
  • 1 tsp Dijon mustard
  • 1 tsp lemon juice
  • 2 cloves garlic, minced
  • ½ tsp red pepper flakes
  • ½ tsp black pepper

Instructions:

  1. Bring the steaks to room temperature (about 30 minutes). Pat dry and season both sides with salt, pepper, and smoked paprika.
  2. Heat a cast iron skillet over high heat and add olive oil until shimmering.
  3. Sear the steaks for 3–4 minutes per side until golden brown. Lower the heat and cook for another 2–3 minutes per side for medium-rare.
  4. Let the steaks rest under foil for 5 minutes.
  5. Make the cowboy butter by mixing all ingredients in a bowl.
  6. Serve hot, with cowboy butter spooned over the top.
