Some meals just taste like home. And if there’s one cut that defines slow-cooked comfort food, it’s a chuck roast. With its deep, rich flavor and perfect fat content, chuck roast is ideal for low-and-slow cooking.
This recipe is as simple as it gets—seared chuck roast, slow-simmered in a blend of herbs, garlic, and broth until fall-apart tender.
Ingredients:
- 3–4 lb Best Damn Beef Chuck Roast
- 1 ½ tsp kosher salt
- 1 tsp black pepper
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup beef broth
- ½ cup red wine (optional)
- 1 tbsp Worcestershire sauce
- 2 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 3 large carrots, chopped
- 3 potatoes, quartered
Instructions:
- Season the chuck roast with salt and pepper.
- Sear the roast in olive oil over high heat for 2–3 minutes per side.
- Transfer to a slow cooker, add garlic, broth, wine, Worcestershire sauce, and herbs.
- Cook on low for 8 hours or until fork-tender.
- Add carrots and potatoes for the last 2 hours.
- Shred and serve with the broth.
